Have a few things I did today, processing the last of my tomatos and baking a goody for this evening that is gluten and wheat free.
First I washed and sliced tomatos for the dehydrator, 4 trays worth. I did need to cut off some icky bits, but i was able to salvage quite a bit:
The romas I cut in half, tossed in the roasting pan and added a pinch of kosher salt, some italian seasonings and olive oil. I popped them in the oven at 350F intil they softened and took on a bit of color:
When that was done I popped in a bread pan with the gluten-free chocolate muffin mix I'd gotten from Freecycle. It is nice to be abl to make baked goods ALL my friends will be able to eat:
