Humus
Hubby has been craving humus of late, so I decided to make it from scratch (I'd been buying the powdered, just add oil and water humus from Winco's bulk section) and have decided I am going to make sure we keep plenty of canned chickpeas in the pantry for a quick snack
2 15 oz cans chickpeas, drained
1/4 cup lime or lemon juice
1/4 cup olive oil
1/4 tsp salt
2 heaping tablespoons tahini or peanut butter
2 tablespoons roasted sesame oil
Put all ingredients into your food processor and blend until smooth (or if you prefer chunkier, pulse until it is to your taste). Turn out into a bowl and cover with plastic and let sit in the fridge to let the flavor meld.
Pull out of fridge and allow it to come to room temp and serve with pita bread, baguettes, chips or warm flour tortillas. The possibilities are endless.
The one nice thing about this recipe is you can adjust the ingredients to suit your taste.
