Pork Benedict, my way

Decided to have something a little bit different for dinner last night. I wanted pork with potatoes and it went from there.

I started by cooking some cubed roast pork and hash brown potato patties on the non-stick griddle:

Then made an extra thick pork gravy using a roux I made with 3 tablespoons butter, 3 tablespoons flour to which I added 2 packets of pork gravy mix and about 1 1/2 cups of water:

We decided on poached eggs:

Potato patties on the plate, topped with a poached egg each:

Then topped with the cubed pork and nice thick gravy:
