Chicken salad sandwiches made from leftovers

After years and years and years, I realized I really hate leftover chicken, at least in its original form. I do like to make a quick and dirty chicken salad sandwich using fried chicken from our favorite grocery deli.



We like to get spinach dip to dip the potato wedges into, so we always have plenty left for sandwiches.

I pull the meat off the bones and roughly chop up the chicken, skin and all and mix it with the spinach dip:




As I had leftover Hawaiian rolls, that is what I used for my sandwiches, the chicken salad is great on whatever bread you like.
