Cheesy potato bake
A really nice and simple side dish is a cheesy potato bake.
Start by melting a tablespoon or two of butter with a tablespoon or two of olive oil over medium heat in an oven safe pan:
While that is melting, slice your potatoes (I used about 5 medium sized russets) and preheat the oven to 350F:
Melt the butter and olive oil until the butter is bubbly:
Take the pan off the heat and start to lay in your potatoes:
Sprinkle on some fresh ground black pepper:
Sprinkle in your favorite cheese, in this case I used shredded Colby jack and sharp cheddar:
Layer on more potatoes, black pepper and cheese and repeat until the pan is full :
Bake in oven until the potatoes are tender and the cheese is a golden brown.
Let it sit to cool a few minutes and serve.

Love the step by step pictures. You motivate me a bit. I'm lazy and rarely get around to doing this, but wish I did.

I have to keep reminding myself to keep the camera in or near the kitchen when I start cooking, so many times I completely forget and only have the end product. I am hoping to do more over break when I am off work and have time to think about what I am going to cook, esp since I have had to go gluten free and need to experiment with other flours and such for baking.
