Poor Folks Steak Neptune

Here is a recipe fairly easy for the beginning cook, what my hubby call's Poor Folks Steak Neptune. There was a restaurant in British Columbia he and the Lout (his best friend) loved to go to that served a dish called Steak Neptune. Steak Neptune consisted of a nice cut of steak, grilled to perfection and topped with crab meat and hollandaise sauce. When he moved down here and told me about it, we came up with an affordable version. Ingredients: Beef (we usually use top round steak) imitation crab (for this recipe we find the fat free to taste the best) 1 packet of hollandaise sauce mix 1/4 cup butter or margarine 1 cup water or milk, depending on the sauce packet instructions Cook the steak to your prefered doneness, either grilling, broiling or frying. Salt and pepper to taste. Prepare the hollandaise sauce according to the packet. When steak is done, plate steak, top with the fake crab and then drizzle the hollandaise over the top. Voila! Jean's IP Meatloaf

So, I finally broke down and made meatloaf for the first time in my life. I grew up loathing meatloaf, mostly a texture thing and it was just too weird. But I had family coming for dinner last Tuesday night and needed to come up with something that was different and not turkey or chicken (with Thursday being the big turkey day, didn't want to ruin the anticipation). So I looked at what I had on hand and decided to give it a try. I looked at several different Instant Pot meatloaf recipes and then came up with my own. I used gluten-free bread crumbs so I could eat it and simplified the glaze. Most recipes had way too many ingredients, not to mention sugar. Meatloaf: 2 lbs ground beef 1 half onion 4 slices of bacon ½ cup Parmesan cheese 1 cup bread crumbs 3 tbsp crushed garlic 1 tbsp seasoned salt 2 tsp black pepper 2 tsp dried oregano 2 tbsp ketchup 2 tbsp bbq sauce 2 eggs, slightly beaten Glaze: 2 tbsp honey 2 tbsp Worcestershire sauc...

Churkey burgers

Because we have to watch the fat in hubby's diet for a while and he LOVES burgers, I decided to attempt turkey burgers again. The first time round we found them to be too dry, no matter what I did. Turkey just doesn't have enough fat for a decent burger. So I got the great idea to grind up some boneless, skinless chicken thighs to mix in. So I pulled some thighs out of the deep freeze (4 of them) and thawed them in the microwave. I then popped them into the food processor and pulsed them until they were ground up nicely. I turned the ground chicken into a bowl and added 1-1.5 lbs of ground turkey and mixed them together (this is where food grade plastic gloves come in handy. I don't mind handling raw ground beef or other raw meats, but ground turkey and chicken just weejes me out).
