Easy Mint chocolate fudge
Over the holidays I fell in love with an easy fudge recipe. Just chips, sweetened condensed milk and what ever flavorings you like. In this case, chocolate mint fudge.
Ingredients:
24 oz of white chocolate chips
1 can sweetened condensed milk
1 cup mini dark chocolate chips (reserve a handful to top the fudge)
1 tsp vanilla
green and yellow food coloring
peppermint extract (to taste)
Put chips and sweetened condensed milk into microwave safe mixing bowl and melt on high for 1 minute in microwave. Give a stir and heat again for another minute. You can go 30 seconds if you want, the goal is to have it nice and smooth.
Remove, add vanilla and peppermint exact. I started with 1 tsp extract and added a couple more drops. Following the instructions on the food coloring box for mint green, I added 6 drops of green and 2 drops of yellow for the perfect mint green.
Once mixed, I added 1 cup of the mini dark chocolate chips and mixed it thru to create a swirled pattern.
Pour into a prepared 8" X 8" or 9" X 9" pan lined with parchment paper, wax paper or foil and spread the fudge out evenly. Sprinkle the remaining mini chips on top and pat down. Cover with some plastic wrap and put in the fridge for a few hours. Once hardened, you can remove the fudge from the pan, set on a cutting board and cut into pieces.
Store in a container in the fridge and when ready to eat, let it come to room temp for delicious fudgy goodness.
